I was given a huge yellow courgette to take home. I wasn’t really sure what to do with it, and for some reason I decided to make a sort of lasagne with it. I’m not entirely happy with the results, but I think it’ll be worth another try.
The basic idea was to make a white sauce, layer the sliced courgette and lasagne sheets and then bake it. I didn’t make enough white sauce, the oven cooked the courgette unevenly and the lasagne sheets stuck together, but it was still food. And it tasted pretty good, too.
